When I turn the throttle while riding, it feels as if it is getting choke down. This happens after riding it for a while, not immediately. What is it that is making this happen? Too much gas???

No quite the oposite, if it does only when the engine is warm up, it means your cold enrichment valve is close so your bike is getting too much air and not enough fuel, some physics are in order, air is lighter than fuel so when you open the throttle it rush in faster than gas so your engine goes lean for a while untill the gas catch up, old car carburators had an accelerator pump inside to take care of this little problem, cv carbs relay on old vacuum so when you open the carb you increase vacuum in a diagphram on top and that makes a needle raise an allow more gas (that were the infamous needle shim goes) what regulate the speed of this needle raising is an spring on top of the diagphram, probably you need to shim your needle first an then if you still have the problem buy a new spring and start clipping coils untill you are satisfied with the result

My scooter is doing the same thing, sounding like it will choke out after awhile. i added a cone filter, new variator, and 80 jet. Do you think i need to put an 85jet in or should i shim my needle. if so, how much?
