When you take the rad cap off fluid IS supposed to overflow. This happens because there's essentially a syphon setup so the fluid runs from the reseviour to the rad when space is available in the rad. This is a really good thing because if you get a coolant leak then your coolant system will draw coolant from the reseviour so it still works and then hopefully you'll notice your reseviour getting low before you run out.
Now that you have redone your coolant, this syphon isn't happening anymore because there is air in the line from the reseviour to the rad. What you need to do is blow into the hose coming from the reseviour that leads to nowhere. When you blow in here it will force the fluid from the reseviour into the rad and thus blow out the bubbles from the line. Once coolant starts flowing on it's own and overflowing the rad then put your finger over the end of this hose so air can't flow in. This will stop the overflowing temporarily while you put the rad cap on. Then you can take your finger off the rad cap and just refill the reseviour if it's low and route that hose you where blowing in back to a more discrete location.
